Curtis Duffy is a prominent American Executive Chef and owner of Ever, his latest two-Michelin-star restaurant in Chicago. He has built many world-renowned restaurants. Curtis’ previous restaurant, “Avenues at The Peninsula Hotel Chicago”, gave him two Michelin stars, and “Grace” won two Michelin stars in its first year and three Michelin stars the next four years in a row.
Curtis won the James Beard Foundation’s Best Chef, Great Lakes Award in 2016, as well as many accolades such as the Forbes Travel Guide’s Five-Star rating and AAA’s Five-Diamond rating. At Auguste Escoffier School of Culinary Arts, a $25,000 scholarship in the Chef his name is awarded. While in high school, Curtis began working for Chef John P. Souza at a private golf club, learning both basic and advanced culinary techniques. Following six years under Souza’s tutelage, Curtis left to work as Chef de Cuisine at another private club while completing his studies at Ohio State University.
Shortly following receiving his Associate’s Degree in Applied Science (1999), Curtis left Ohio to serve at the legendary Charlie Trotter’s in Chicago; while at Trotter’s, Duffy staged at The French Laundry. He honed his skills at the two restaurants, oft-named #1 and #2 in the country. Following three years at Trotter’s, Curtis accepted a position as Pastry Chef at the esteemed Trio, where he was known as “Best Innovative Pastry Chef” from Food & Wine (2003). He met Chef Grant Achatz at Trio, and in 2004, the two left Trio to open Alinea, where Curtis worked as Chef de Cuisine. In 1987, when Curtis was 12, his father, Robert “Bear” Duffy, gathered his wife and three children for a family meeting. “We’re moving to Ohio,” Robert said. No warning, no time to reason or argue. The family would leave Colorado Springs in two weeks. Robert a Vietnam War veteran given his nickname by his biker friends, pulled in decent money at his father-in-law’s tire retreading company.

In June 2019, Curtis and Michael Muser reported that they would open a new restaurant in Chicago called Ever in the spring of 2020. Delayed a few months by the COVID-19 pandemic, Ever restaurant opened on July 28, 2020. Ever was forced to close for indoor dining from November 2020 to January 2021 when the City of Chicago ordered an indoor dining ban for all restaurants because of the pandemic. On February 16, 2021, Ever reopened for indoor dining. Ever became awarded two stars in the 2021 Michelin Guide. In its announcement Michelin said: “Chef’s vision of fine dining enchants palates with complex flavors, stirring textures and visual fireworks.”
